Bombay Aloo (Bombay Potatoes)

Vegetarian!

Ingredients
1 1/2 pounds Baby or small potatoes
2 tablespoons Clarified butter
OR use vegetable oil
1 teaspoon Mustard seeds
1 teaspoon Cumin seeds
1 teaspoon Garlic powder
1 teaspoon Turmeric
1 teaspoon Mango powder
OR lemon juice
1 teaspoon Garam masala
1 teaspoon Coarsely ground chili flakes
1/2 teaspoon Ground cumin
Salt to taste
1 tablespoon Lime juice
Chili flakes (for garnish, if desired)
Fresh chopped cilantro (for garnish, if desired)

Step by Step Instructions
  1. Put the potatoes into a pot and cover with water. Bring to a boil and let cook for 10 minutes. Let the potatoes cool and, if desired, peel and/or slice the potatoes in half.
  2. Heat the butter/oil in a large pan over medium heat, then add the mustard seeds & cumin seeds and cook for 1 or 2 minutes.
  3. Add the potatoes and the rest of the spices to the pan and toss to coat (if the potatoes are too try, add 2 tablespoons of water). Let cook for 2 to 3 minutes.
  4. Remove the potatoes from the pan, drizzle with lemon juice and garnish as desired.
