Watermelon Sorbet

From CSA Farmers Market

Combining fruit and basil seemed a bit strange to me. You know, the odd recipe you hung on to for years but never got around to trying until you have a “what do I do with all this watermelon” situation. What I didn’t realize at first was how great it is to get to eat watermelon in December, even if it is frozen.

Serves: about 6
Vegan!

Ingredients
1 cup water
1/2 cup sugar
2 cups watermelon chunks
2 cups berries: any kind or combination
1 tablespoon Slow Dog Lemon Basil

Step by Step Instructions
 1. Combine water and sugar in a saucepan. Bring to a boil. Cook 2 minutes. Let cool. Add the rest of the ingredients and blend until almost smooth.
 2. Pour into a 13 x 9 Pan and freeze for 1 1/2 hours. Scratch up with a fork until its the texture of a scoop of snow. You can serve it with fresh berries for garnish.
 3. If freezing for later: Store in a freezer container. When ready to serve, let thaw until it scratches up easily. Also, my kids liked it unscratched up like a popsicle.
