It doesn’t exactly feel like it yet, but there are signs that summer is winding down. Sure, the equinox this last week is the official start of Fall, but the weather hasn’t gotten the memo yet. Still, the nights are longer than the days, and the plants pick up on that really quick. Take the arugula, for example — there are four different listings for that zesty green. It might have some heat of its own, but it’s not fond of summer at all. Right on its tail we’ll see bountiful spinach, cabbages, broccoli again, and other cool season crops. The summer items will hold on as long as they can — we’ve still got over a month until frost will put an end to those (except for what our growers have planted in high tunnels and greenhouses). So, for the next few weeks we’ll get to enjoy the best of both seasons! It’s exciting times in the kitchen, for sure.

Thank you so much for your support of Athens Locally Grown, all of our growers, local food, and our rights to eat it. You all are part of what makes Athens such a great area in which to live. We’ll see you on Thursday at Ben’s Bikes at the corner of Pope and Broad Streets from 4:30 to 8pm!

The Athens Farmers Market is open on Saturdays at Bishop Park and Wednesday afternoons downtown at Creature Comforts. You can catch the news on their website. The West Broad Farmers Market is up and running, Saturdays from 9am to 1pm, and you can find out more here: http://www.athenslandtrust.org/west-broad-farmers-market/. The Oconee County Farms Market is open on Saturdays in Watkinsville. Their website is www.oconeefarmersmarket.org. The Comer Farmers’ Market is open on Saturday mornings from 9am to noon. Check www.facebook.com/comerfm for more information. Washington, GA also has a lovely little Saturday market, running on Saturdays from 9-12. Folks to the east can check out the Hartwell Farmers Market, which starts bright and early on Saturday morning from 7am to noon, and Tuesday afternoons from noon to 4pm. All of these other markets are separate from ALG (including the Athens Farmers Market) but many growers sell at multiple markets. Please support your local farmers and food producers, where ever you’re able to do so!

HI EVERYBODY!

I have been looking all over for an outdoor pastured Poultry grower, and am very excited I could enlist a farm with an excellent reputation, BACK IN TIME FARMS out of Stratham, GA. Right now they are between processings but do have Boneless/skinless Chickens Breasts, a Chicken 8-pack, and Medium-hot Chicken Breakfast Sausage Links, all non-GMO, no antibiotics, etc. We’re fortunate to have them, and there’s no better road to eating healthy! In the Meats section.

BEST KEFIR EVER? Yes says Leilani, who has been having a conniption fit ever since she discovered Tanya’s creation over at CULTURAL TRADITIONS. Leilani is a big Kefir fan in general, but she says nothing tastes as good as their Coconut Milk Kefir! Leilani literally begged Tanya to list this so she could get more! You’ll find this and other tasty treats in the Fermented/Probiotic Products section.

LETTUCE IS BACK in the Vegetable lineup for LEILANI’S, joining Heirloom Tomatoes, tender Green Beans, Eggplants, lots of Peppers including beautiful Red and Orange Bells, Squash, and a new round of Cucumbers just starting to come in. Greener Acres Farm:  SPELT!!! What is it? What do you do with it?


SPELT!!!

What is Spelt?

Spelt, also known as dinkel wheat, or hulled wheat, is a species of wheat cultivated since approximately 5000 BC. Spelt was an important staple in parts of Europe from the Bronze Age to medieval times; it now survives as a relict crop in Central Europe and northern Spain and has found a new market as a health food. Ancient grains like spelt are claimed to be more nutritious and healthier than modern grains, and over the years 2004 to 2014, spelt gained widespread popularity as a wheat substitute for making artisan breads, pasta and cereals.

  • Those who enjoy spelt bread and pasta say it tastes better than wheat and describe it as nutty, wholesome, and more filling.
  • Spelt boasts a higher protein and mineral content, but lower in gluten content than modern wheat.
  • Spelt also contains significant levels of iron, copper, manganese, magnesium, phosphorous, potassium, zinc, selenium, niacin, thiamin, vitamin B6, and folic acid.

What is “Sprouted” Spelt?

Sprouted flour is made from sprouted grains, including not just red and white wheat, but spelt, amaranth, Kamut, einkorn, sorghum, rye, corn, and more. As its name implies, a sprouted grain is a grain that’s been allowed to sprout and begin to germinate as it would if left to its own devices in nature. A tiny awakening happens in each one.

Your taste buds will instantly detect more complex flavors in bread, cookies, or crackers made using sprouted flours since sprouting allows a portion of the starch in the grain to break down into simple sugars. These sugars act like a spotlight, highlighting the individual characteristics of each grain.

Flavor is one thing, but sprouted flours also reportedly pack an impressive nutritional punch. The dormant vitamins and minerals in grains are activated and brought to life during the sprouting process. By some estimates, sprouting increases vitamin C and carotene content, creates B vitamins, and bumps up the amount of trace minerals present.

Sprouting also breaks down the grains’ natural protective barrier, making them easier to digest.

What do you do with Spelt or Sprouted Spelt?

I am so glad that you asked… We at the farm have been experimenting and searching the web for ways of incorporating this ancient grain into our diets. We can definitely attest to it’s nutty flavor and hearty texture.

We have included several recipes under our ‘Recipe’ tab for you to try:

  • Bread Machine Honey Sprouted Spelt Bread
  • Homemade Spelt Hamburger Buns (using the bread machine)
  • Spelt Muffins
  • Spelt Whole Wheat Pasta

We are also hoping to get the recipe from Mrs. Golden for her fried chicken using spelt flour. (Smelled delicious when we visited a few weeks ago.)

Where can I get Spelt Flour?

You are so fortunate to have access to the most amazing CERTIFIED ORGANIC Spelt and Sprouted Spelt Flour (as well as Buckwheat and Sprouted Buckwheat Flour) through Golden Farms here on our online farm market.

Certified organic whole grain flours ARE more expensive that conventional, highly processed/refined white flour, but they are definitely more nutritious and flavorful and worth their weight in gold.

Disclaimer: Spelt contains gluten, and is not a good option for people with gluten intolerance or a wheat allergy.

Normally we would be having kale at the market, but hot and dry conditions have pushed fall greens back a bit this year. A tip of the hat to all of our Growers who have to contend with Mother Nature as they work to provide our food. The late freeze we had this past spring caused over 75% loss of Apples which are normally harvested this time of year. :-(

We are happy to add a new Grower to our market: Mable Everette tends a productive vegetable garden on her family’s acreage in Plumerville called the Everette Brown Farm. Mable is planning her spring garden now and anticipates having kale, turnips, collards, onions, okra, and more. She grew the pumpkins that were on the extras table Friday. Take a minute and learn more about Mable’s operation under the “Our Growers” tab on the top of the page.

Bar C Farm has Andouille Sausage for only $5 per pound, and Bratwurst Sausage for $6 per pack of 4 Brats. Time to fill your freezer!
