Hello all,
I hope Turkey Day found you all well. For those wondering, it was confirmed Parvo and I am thrilled to report that Panda recovered 100%.
Again, heaven knows I don’t wish this on anyone but should you find yourself in the same boat and don’t agree with pumping an already seriously I’ll dog with chemicals, my friend stumbled accross a solution completely herbal that worked like a charm. True, she lost 3 dogs but we believe there were other issues involved.
1 past before she rerealized what was happening and the other 2 she wormed first. The others who ONLY got the solution All recovered.
Anyway, back to business…..
Come in, look around and buy, buy, buy. We have another holiday right around the corner so stock up now. It looks like the cold weather has finally found us and it will be getting chilly next week….. I don’t know about you but hot chocolate sounds wonderful.

Happy Thursday, and welcome back to another amazing week of a market opening!! It’s been a crazy couple of weeks, Thanksgiving came and went, and then your lovely little market of love was front and center, last night, as Cosmic Charlie and Oakview Farm Meats debuted their very popular slider sandwiches as part of the food service at the annual Monument Square District Holiday Gala! But, not only did we enter into a new ring, we took the market with us!! We promoted, we had product, we had local vendors with us both as guests, as local celeb bartenders, as servers. Charlene put together an amazing gift basket of Locally Grown products! We sparkled, we dazzled, and we made great strides in putting this market up on a new level.
It was exciting to combine both of my worlds…the downtown Monument Square District and this market!! It was the perfect night, with the perfect food, with the perfect combination of local. We were out, in full force, and I couldn’t have been more proud.
Stand Back…we have only just taken our next steps!!!
It is Thursday, I open the market for you, and I look forward to seeing each of you, next week, at order pickup!!

Bob from Bradbury Honey (B&B Enterprises) enjoyed meeting you all on Tuesday when he was Vendor of the day! He has expanded his listings on the market. Wildflower, Gallberry, Sourwood and Tupelo honey will now be offered on a weekly basis. In addition, he has added is handcrafted candles made from beeswax he has collected from his local hives.

This weekend we will be placing our last group buy of the year. We will be taking orders for Grass Fed Cheeses from Kenny’s Farmhouse Cheeses and Jason Wiebe Dairy. In addition, we will place an order for Sustainably Caught Seafood from VitalChoice. This will only be for shellfish and sardines as Doug’s Salmon provides the co-op Wild Alaskan Salmon.

Group Order for Grass-fed Cheese This Weekend
This weekend we will be taking orders for grass-fed cheese from Kenny’s Farmhouse Cheese and Jason Wiebe Dairy.
Low Temp Pasteurized and Raw Milk Cheeses will be available.
I’ve asked the cheese makers to put “(Raw Milk Cheese)” in the title if it is raw cheese aged 60 days according to FDA regulation. All other cheeses are low temp pasteurized.
Raw milk cheese that is listed on the market is safe for human consumption and is aged at least 60 days per FDA regulation.
Prices and available sizes will be on the market website tomorrow for ordering. The pricing will include shipping and taxes/fees.
The cheese will NOT be available for pick up this Tuesday. Please allow at least 2 weeks. I will email you when it is available for pick up.

- Old World, Handmade Cheese making Techniques

Farm to Table Recipes
BUTTERNUT SQUASH with WALNUTS & VANILLA
Yield: Serves 4.
We’re using butternut squash for this dish, but you could easily use kabocha squash instead, or any firm, easy-to-peel, winter squash. You can either boil or roast the squash, directions are given for both methods.

Ingredients
1 butternut squash, about 2 pounds, peeled, seeds removed, flesh cut into 1-inch cubes (see how to cut and peel a butternut squash)
3 bay leaves (if boiling the squash)
Salt
1 heaping cup of walnuts (can substitute pecans or pine nuts)
2-3 Tbsp butter
2 teaspoons grated ginger
1-2 teaspoons vanilla extract
Lemon juice
1/2 teaspoon dried thyme
Black pepper to taste
Method
1a If roasting Preheat oven to 400°F. Coat the cubed squash with a little vegetable oil and spread out onto a baking tray. Sprinkle with salt and roast until the cubes begin to brown, about 20 minutes. Remove from oven.
1b If boiling Put 4 cups of water into a medium-sized pot and add the bay leaves. Bring to a simmer. Add the squash to the pot. Boil, covered for 10 minutes. Drain.
2 Heat a large sauté pan over medium-high heat and toast the walnuts. Stir frequently or they will burn. Once they they start to brown, and you can smell the aroma of toasted walnuts, remove from heat.
3 Melt the butter in the pan with the walnuts over medium-high heat. Toss the walnuts to coat with butter, then add the squash. Toss them to coat with butter.
4 Add the grated ginger, vanilla extract, black pepper, a little salt and dried thyme and toss once more. Turn off the heat and squeeze some lemon juice over everything. Taste for salt and lemon and add more to taste. If you want this to be a bit more luxurious, mix in another tablespoon of butter or two before serving.

South Cumberland Food Hub: End of Year
